Tried a new recipe last night and YUM! Super easy, too. I got it from The Ultimate Soup Cookbook which was a birthday present from Janis (yay Janis!). Ken and I love soup and this book is huUuge and full of loads of recipes (not so many pictures, but sometimes that’s a good thing). So I was running late last night but had already thawed the meat so I went ahead and made dinner that I’d planned. 15m to brown the beef/onions, during which I opened cans of other stuff and mixed up my seasonings, toss it all in and stir and simmer 30mins, DONE and EAT and was it goooood! Very satisfying, yummy flavour that was strong but not over the top. Lots of fiber from the lots of beans and low fat (if you do lean beef). Typically I make a dinner a few times before committing it to my recipe card collection but this puppy’s going in today. Now I share:
Taco Soup
2lbs lean ground beef
1 sm onion (chopped)
1.5c water
3 cans (4oz ea) chopped green chilies
1 can (15-16oz) pinto beans (drained and rinsed)
1 can (16oz) lima beans (drained and rinsed)
1 can (15-16oz) red kidney beans (drained and rinsed)
1 can (14oz) hominy (they say drained, but mine was a huge, can-shaped blob so I just broke it up as is)
3 cans (14oz ea) stewed tomatoes (next time I’m going with diced instead)
1tsp salt
1tsp pepper
1 pkg (1oz) ranch dressing mix
1 taco seasoning recipe (see below – I mix my own instead of buy it but you can use the pre-made packaged stuff if you like – 1 pkg 1.25oz ones)
shredded cheddar (optional, topping)
tortilla chips (optional, topping)
In a large (I filled my 6.5qt) Dutch oven or soup pot, brown ground beef with onion; drain off fat. Add everything else except the toppings and simmer 30mins covered (though I forgot to cover it and it was lovely thick but still stew-ish).
It made dinner for Ken and myself plus enough for 3 dinners in the freezer. For so little work, yummy taste, and so much results I think we’re going to have this often!
Taco Seasoning
2tbsp flour
1-2tsp chili powder (depending on heat desired)
1.5tsp minced onion
1.25tsp salt
1tsp paprika
3/4tsp (1 cube) beef boullion
1/4tsp sugar
1/4tsp cayenne pepper
1/4tsp garlic powder
dash onion powder
Use with 1lb gr beef and 3/4c water for tacos or in place of a pkg of mix.
